Carrots 

  • 2 lb fresh whole, cleaned and cut lengthwise

Honey Glaze

  • 2 tablespoons butter, melted
  • 1 tablespoon extra virgin olive oil
  • 1 teaspoon fresh rosemary – finely chopped
  • 1 teaspoon fresh thyme- finely chopped
  • 1/2 teaspoon smoked paprika, chili powder, or red chili flakes
  • 1/2 teaspoons sea salt
  • 1/2 teaspoon black pepper
  • 2 teaspoons honey, plus more for drizzling
  • Fresh thyme, rosemary, or parsley as garnish

Instructions

  1. Preheat the oven. Preheat oven to 425 degrees F and line a large baking sheet spray with cooking oil, or coat with butter to prevent sticking. Set aside.
  2. Prepare the carrots. Wash and peel your carrots—dry well. Slice your carrots in half vertically so they are all approximately equal in width. Place carrots on a large mixing bowl.
  3. Prepare the glaze. In a small bowl, whisk together the glaze ingredients until well combined. 
  4. Coat the carrots in the glaze. Add the honey glaze to the mixing bowl with the carrots. Mix well to coat the carrots with the glaze completely. Spread the carrots evenly across the prepared baking sheet.
  5. Bake and serve. Bake the carrots for approximately 20-25 minutes or until fully cooked and fork tender. Opening the oven to stir the carrots twice during cooking, so they roast evenly. Remove from the oven, transfer the cooked carrots to a serving platter, drizzle with more honey, and sprinkle with fresh thyme or parsley, if desired. Enjoy warm!

Notes

Tips:

Butter the baking dish or baking sheet generously to avoid sticking and add flavor.

Adjust baking time if baking in a ceramic dish or a flat baking sheet. The carrots will roast faster on a baking sheet than in a baking dish.

Brown Sugar Honey Glazed Carrots– want a little extra sweetness with a slight crunch? Add two teaspoons of brown sugar to the glaze!

Storage and Reheating:

Store: Place leftovers in an airtight container and store for up to 3 days in the fridge

Freeze: Use a freezer-safe bag or container and store for up to 3 months.

Reheat: Reheat in the microwave until the carrots are warmed through. You can add a teaspoon of water to the container before heating. This adds additional moisture to prevent the glaze from getting too sticky while reheating. Oven– cover a baking dish with foil and place it in an oven at 350°F (175°C) for 10-15 minutes to reheat.

Variations:

Cinnamon or Nutmeg– try adding a pinch of cinnamon or nutmeg to enhance the sweetness of the carrots and honey glaze.

Fresh Herbs- use other fresh herbs, such as oregano or rosemary, to add an herby twist.

Lemon Juice, or Orange Juice- add a tablespoon of lemon juice to brighten the dish and cut the sweetness.

Garlic- add a clove of minced fresh garlic to the sauce, if desired.

Maple Syrup– add a little maple syrup for added taste and sweetness- you can also do half honey and half syrup.
