Heat the milk to warm it and sprinkle the yeast on top. Let it set, then mix.

Step 1

Combine and whisk the flour, sugar, and salt in the stand mixer bowl.

Step 2

Add the milk mixture, beaten eggs, oranges zest, and vanilla to the bowl. Knead the mixture until combined.

Step 3

Add and spread the butter cubes over the dough mixture, then continue kneading.

Step 4

Grease your hands with oil and shape the dough into a ball by kneading. Place it in a lightly oiled bowl and cover.

Step 5

Let the dough rest for the first rise. While waiting, make the pastry cream, let it cool, and transfer it to a pastry bag.

Step 6

Transfer the risen dough to a lightly floured surface and knead. Then flatten the dough and roll it into a rectangle.

Step 7

Cut the dough using a round cookie cutter. Then, place each cut-out on a baking sheet with parchment.

Step 8

Cover the doughnuts with plastic wrap and let them proof for the second rise. Then, prepare to fry them and cut the parchment papers.

Step 9

Fry the doughnuts in batches. Remove them from the oil and drain them in paper towels. Then, roll in sugar and let it cool.

Step 10

Add the pastry filling to the cooled doughnuts using the pastry bag. Then, make a small swirl at the top.
