Prepare the crust and blind bake until the edges start to turn golden.
Sauté the onions and garlic with olive oil until softened.
Add the spinach to the sautéed onions and garlic and season.
Whisk the eggs and milk in a bowl and sprinkle half of the Gruyere cheese at the bottom of the crust.
Spread the spinach mixture evenly over the cheese and pour the egg mixture over the top.
Sprinkle the remaining gruyere cheese and bake until the top of the quiche is golden brown.
Make sure to use fresh nutmeg and grate them.
