Copycat Panera Autumn Squash Soup

Ingredients

onion

garlic

broth

apple cider

coconut milk

honey

curry powder

cinnamon

nutmeg

Place the carrots and butternut squash on a baking sheet and drizzle with olive oil. 

Step 1

Roast until tender and let them cool slightly.

Step 2

Sauté the onion and garlic until soft and fragrant.

Step 3

Add the roasted butternut squash and carrots.

Step 4

Stir in the pumpkin puree, broth, apple cider, coconut milk, curry powder, cinnamon, and nutmeg. 

Step 5

Simmer and blend the mixture until smooth and creamy.

Step 6

Season with salt and pepper. Garnish and serve.

When using a regular blender, let the mixture cool first before blending.
