Crispy Chiacchiere Di Carnevale

These pastries have a subtle sweetness and a crispy texture, scented with citrus and vanilla. They are also known to be light, airy, and dusted with powdered sugar.

Ingredients

vanilla

orange zest

sunflower oil

salt

liqueur

Combine the dry ingredients. Add the butter and mix with your hands. Then, make a well in the center.

Step 1

In a small bowl, mix the eggs, zest, vanilla, and liqueur. Pour them into the well of the flour mixture.

Step 2

Mix and combine. Knead using your hands until smooth and elastic, then wrap in plastic. Let it rest.

Step 3

Unwrap the dough and cut it into four even pieces. Sprinkle flour on the work surface and flatten the dough.

Step 4

Set the widest setting and roll the dough through. Continue rolling until the second to last setting is reached.

Step 5

Cut the dough if it gets too long. Cover the dough sheet and roll the remaining pieces.

Step 6

Using your desired tool, cut the dough into 2 inches-wide strips. Cut each in the middle without cutting the edges. 

Step 7

Heat the oil filling the pan with about 2-3 inches. Then, fry the dough and drain them on paper towels.

Step 8

Continue frying the chiacchiere in batches until golden brown and bubbly.  Use a kitchen mesh spoon to turn them.

Step 9

Let them cool and dust them with powdered sugar, then serve.
