Crispy Roasted Smashed Potato and Tomato Pesto

The best way to enjoy potatoes is to smoosh them up with some other delicious ingredients like pesto and tomatoes.

Smashed potatoes and tomatoes are a classic pairing, add the pesto, and it becomes something special! This recipe is soft on the inside with crispy edges that are perfect for any weeknight meal!



Pesto Yukon gold or honey gold potatoes Grape tomatoes or tomato medley variety Walnuts Olive oil Salt Pepper 

Prepare and preheat the oven to 450 degrees F.

Step 1

Bring a large pot of water to a boil. Add salt and potatoes into the hot water.

Step 2

Drain the potatoes. Then, brush the baking sheet with olive oil and place potatoes on top of it.

Step 3

Smash the potatoes using the back of a spoon or a small cup and gently apply pressure. Add cut tomatoes to the baking sheet with the potatoes.

Step 4

Bake for 20 minutes and season with salt and pepper. Serve with pesto, olive oil, and chopped walnuts.
