Ingredients For the Crust – 1 recipe for pasta frolla  For the filling: – Eggs – Sugar – Ricotta – Vanilla extract – Almond extract – Lemon zest

In a medium mixing bowl combine dry ingredients: flour, sugar, salt and baking powder. Mix until incorporated. Add egg and cold butter and mix until incorporated.

Turn the dough out onto a lightly floured work surface and gather it into a ball. Let it rest then roll it out and fill pie pan.

1. Whip the ricotta in a stand mixer Whip until smooth. 2. Add sugar. Add eggs one by one to the ricotta mixture- beat until smooth. 3. Add extracts and lemon.

Trim the edges and fill the pie pan or spring form pan with the prepared ricotta filling.
