Easy Classic Italian Beans and Greens

This is a classic Italian dish that is healthy and comforting. It takes just 20 minutes to make - everything comes together in a single pan, making it a simple weeknight meal.

Clean the escarole, soak it in cold water, and dry it with a kitchen towel or salad spinner.

Step 1

Cut the hard steam of the escarole and chop it.

Step 2

Sauté the garlic until fragrant in a heavy large pot for 15 seconds.

Step 3

Add the chopped escarole to the pot and cook until wilted. Sprinkle a pinch of salt.

Step 4

Add and cook the chicken broth, beans, and Parmesan cheese chunk. Cover the pot and let it simmer.

Step 5

Season to taste then add grated parmigiano cheese and serve with crusty bread.

Step 6

Italian Beans and Greens Tips:

Remove the inner stem as it can leave a more bitter taste.

Add a chunk of parmigiano cheese to enhance the flavor of the broth.
