Prepare the potatoes and bake until the skin looks crisp and the interior is easily pierced with a knife. Then, remove the skin.

Step 1

Grate the potatoes and weigh them. Then, sift all-purpose flour and salt across the potatoes.

Step 2

Gently toss the flour mixture to incorporate and add more flour little by little.

Step 3

Bring the mixture into a ball of dough and mix gently until evenly distributed. Then, start kneading, cover the dough, and let it rest.

Step 4

Divide, cut, and shaped the dough into the desired gnocchi shape. 

Step 5

Place it on the baking sheet and dust it with flour or place it in a freezer.

Step 6

Cook the gnocchi just like the fresh pasta. Boil a pot of water with salt and add the gnocchi.
