Easy Italian Lemon Ricotta Cookies Recipe

This is the best lemon ricotta cookies recipe to enjoy on a lazy day. You can eat these cookies with a cup of coffee in the morning or as an afternoon snack with a glass of fresh lemonade.

granulated sugar

all-purpose flour

baking powder





lemon juice

powdered sugar

Beat the softened butter and sugar until light and fluffy.

Step 1

Add and mix the eggs one at a time, until well incorporated and fluffy texture.

Step 2

Add and beat the ricotta cheese, lemon juice, and lemon zest until smooth. 

Step 3

Mix the dry ingredients and sift them into the wet ingredients bowl. Cover and refrigerate.

Step 4

Scoop the dough into the baking sheet and bake until cooked through. Then, let it cool.

Step 5

Make the glaze in a small bowl. Dip the cookies in it and let the glaze harden.
