Slice the eggplant, season them with salt, and let them sit. Wash and pat dry.

Step 1

Dust the eggplant slices lightly with flour and fry in heated olive oil.

Step 2

Transfer and place the cooked eggplant slices on top of paper towels.

Step 3

Layer the tomato sauce and fried eggplant slices in a casserole dish.

Step 4

Sprinkle the cheeses and repeat the process.

Step 5

Bake the casserole until the cheese is melted and the edges are golden brown.

Step 6

Remove from oven and let it rest. Garnish with basil.
