Prepare the pie crust and cover it with plastic wrap, then refrigerate.
Combine the filling ingredients in a bowl and toss until peaches are evenly coated.
Roll out the chilled pie crust and place it into the pan.
Pour the filling into the pie crust and spread evenly. Dot with butter.
Place the 2nd pie crust on top of the filling and trim excess crust on the edges.
Crimp the edges of the pie and brush the top with egg wash.
Place the pie on a baking sheet and bake until golden brown.
Choose ripe but firm peaches to achieve the best flavor and texture.
