Preheat the grill and slice the eggplants into rounds about ½ inch thick (peeled or with skin on). 

Step 1

Whisk and mix the olive oil, minced garlic, basil, parsley, salt, and pepper in a bowl. Brush this mixture on both sides of the eggplant slices.

Step 2

Reserve some extra olive mixture to drizzle for later. Lay the eggplant slices directly on the grill and cook for about 5-6 minutes per side.

Step 3

Cook the eggplant slices until the grill mark shows and is tender. Remove from the grill and transfer to the serving platter.

Step 4

Drizzle the grilled eggplant slices with the reserve olive oil mixture and garnish with basil. Optional, sprinkle with Parmesan cheese.
