No Potato Leek Soup is creamy, easy, and comforting, full of flavor, and made with just 5 ingredients. It's the perfect weeknight dinner or light lunch.

Ingredients

bay leaves

rosemary

black  pepper

broth

olive oil

green onions

Sauté the leek in melted butter until soft, then add the garlic.

Step 1

Add the cauliflower, salt and pepper, nutmeg, and herbs to sautéed leek.

Step 2

Pour the broth and stir, then bring it to a boil. Cover and turn down the heat to let it simmer until the cauliflower is fork-tender.

Step 3

Let the soup cool until lukewarm. Then, use a blender to blend the soup until smooth and creamy. 

Step 4

Blend the soup until it's perfectly smooth or desired consistency.

Step 5

Sauté the chopped green onions in heated oil until lightly golden brown and crispy. 

Step 6
