This Chocolate Italian Pastry Cream recipe is creamy, smooth, and rich and it's the best filling for crostata, pastries, cakes, and more. You'll want to make this again and again!

Egg yolks Granulated sugar Cornstarch Dark chocolate Milk Vanilla bean or vanilla extract Cocoa powder (optional)

Ingredients

Whip the egg yolks and sugar until light and foamy. Add the cornstarch and mix again until smooth.

Step 1

Heat the milk and stir in the vanilla. Once done, remove from heat and slowly add the egg yolk mixture.

Step 2

Put the saucepan back on low heat and continue whisking. Then, let it simmer until cream begins to thicken.

Step 3

Continue to cook until the cream is thickened then remove from heat and add the chocolate.  Then, Refrigerate.
