Italian Pine Nut Cookies

A super easy recipe for delicious and soft Italian Pignoli Cookies.

There is something so comforting about a hot, fresh-baked Italian Pignoli Cookies. They are soft and chewy almond-based cookies rolled in pine nuts and baked until golden brown, creating a perfectly crisp exterior.

Ingredients

Cut the almond paste and place it in the food processor.

Step 1

Add the sugar, zest, and salt. Pulse until combined and when the mixture resembles cornmeal.

Step 2

Add and process half of the egg whites. Then, add the rest slowly until a sticky dough forms.

Step 3

Roll the dough into 1-inch balls. Grease (or wet) your hands when rolling or use a greased scoop. Then roll the balls in the bowl of pine nuts.

Step 4

Arrange the dough balls on the baking sheet and bake until the nuts turn golden brown.

Step 5

Remove the cookies from the oven and let them cool. Then, dust with powdered sugar.

Step 6

Pine Nut Cookies Tips:

Use room-temperature egg whites

Do not overbake

Grease hands when rolling sticky dough
