Beat the egg yolks, sugar, and vanilla until creamy. Beat egg whites in another bowl until stiff.

Step 1

Microwave the almond paste. Cream it together with butter.

Step 2

Fold the egg yolk mixture gently into the almond paste mixture.

Step 3

Sift the flour and salt. Then, gently fold the egg whites into the mixture.

Step 4

Divide the batter into three equal portions.

Step 5

Add coloring to each portion. Bake until lightly golden and cool.

Step 6

Assemble the layer and add the jam.

Step 7

Cover with plastic wrap and refrigerate.

Step 8

Remove the cookies and add the melted chocolate. Chill again, then cut and serve.
