Simmer the broth and white wine. Add and cook the arborio rice.
Remove the pot from heat and stir in parmesan cheese and seasoning.
Mix the filling ingredients in a bowl.
Take a handful of cooked rice and flatten.
Add the filling in the center of the flattened rice and shape the rice, forming a large ball.
Repeat the process for the remaining ingredients.
Roll each rice ball in the flour and dip them in the beaten eggs.
Coat each of the dipped rice balls evenly with breadcrumbs.
Heat the olive oil and fry the arancini in batches until golden brown.
Remove the cooked rice balls with a slotted spoon and place them in a paper towel.
Shape the rice balls in consistent sizes to ensure they will be evenly cooked.
