Prepare the baking equipment and tools. Beat the eggs in a bowl and cover with plastic wrap, then set aside.

Step 1

Mix and whisks the dry ingredients in a bowl and set aside.

Step 2

Heat the water and butter and bring to a boil. Remove from heat and add the flour mixture, stir to combine.

Step 3

Place the saucepan back on the stove and heat over medium-low, keep stirring until it forms smooth balls. Transfer to a bowl and let it cool.

Step 4

Add the beaten eggs to the dough mixture and mix well.

Step 5

Fill the pastry bag with the dough and pipe it into 2" nests on the baking sheet lined with parchment paper.

Step 6

Bake the dough that resembles a donut's shape with a hole in the middle until golden brown. Then, let them cool.

Step 7

Cut the baked  zeppole in half.  Fill another pastry bag with the cream and pipe it on each half zeppole shells.

Assemble the ingredients. Top the baked zeppole with cherries and dust with powdered sugar.
