Ingredients

Combine and stir the tomatoes, onion, garlic, capers, olive oil, wine, lemon zest, salt, and red pepper flakes. Bake until the tomatoes are soft and jammy.

Step 1

Pat the cod fillets dry with paper towels and brush with olive oil.

Season the fillets with salt and pepper.

Remove the tomato mixture from the oven and toss to mix.

Step 4

Place the cod on top of the baked tomato mixture and roast until cooked.

Remove the baking dish from the oven, spoon the sauce over the fish, garnish, and serve.
