Nicoise Salad Recipe

Puts together a variety of fresh ingredients, a well-balanced flavor, a tangy dressing!

The perfect salad!  A mix of flavors and textures comes together to create a harmonious and irresistible dish.

Bring the saucepan with eggs and water to a boil. Simmer until the yolk is in your preferred doneness.

Step 1

In a different saucepan, bring water to a boil and add the potatoes until fork tender. Remove the potatoes and cut them into halves or quarters.

Step 2

Transfer and drain the eggs into a bowl of ice water. Let them cool, peel, and cut them into quarters. 

Step 3

In the same pan where the eggs were boiled, boil the green beans until crisp-tender. Drain and transfer to the bowl with ice water.

Step 4

Whisk the olive oil, red wine vinegar, Dijon mustard, minced garlic, salt, and pepper until well combined. Set aside.

Step 5

Arrange and assemble all the prepared and cooked ingredients in a large platter or salad bowl.

Step 6

Drizzle the dressing over the assembled salad and let it rest before gently tossing together to combine. Season with salt and pepper.
