Total Time: 1 hour

Yield: 4-6 servings

Let's get started!

The octopus brings a touch of sweetness, while the potatoes add an earthy element that pairs perfectly with the light lemon dressing.

lemon wedges

Prepare and clean the octopus. Then, use a large pot of water to cook it until it becomes tender. Use a fork to test its doneness.

Step 1

While waiting for the octopus to cook, prepare and wash the potatoes. Bring them to a boil using a different pot, then drain and cut them.

Step 2

After the octopus is cooked, remove it from the pot, let it cool, and cut it into pieces. Then, combine it with potatoes, garlic, onion, and parsley.

Step 3

Add the lemon juice to the salad and in a separate bowl, whisk the olive oil, lemon juice, salt, and pepper.

Step 4

Pour the dressing over the octopus salad and gently toss until well combined and evenly coated. Refrigerate for at least one hour.
