Trim the pork tenderloins and pat them dry with a paper towel. Drizzle the olive oil over the pork, rub, and coat the pork with it.
Combine the rubbed ingredients in a bowl and mix well.
Rub the pork tenderloins with the dry rub.
Roast the pork until an instant-read thermometer registers 140°.
Remove the pan from the oven and cover it with foil. Let the meat rest, transfer it to a cutting board, and slice.
Serve and garnish.
