Season the chuck roast and heat the olive oil in a Dutch oven.
Sear the chuck roast. Once cooked, remove it from the Dutch oven.
Add and cook the onion, garlic, carrots, celery, and baby potatoes into the pot.
Deglaze the pot, pour the red wine, and let it simmer.
Add the seared chuck roast back to the pot. Pour the broth and add the herbs.
Cover the Dutch oven and transfer to the oven. Bake until fork tender.
Make and combine the gravy ingredients.
Use a low and slow cooking method to achieve tender pot roast.
