prosciutto
pecorino romano cheese

mozzarella
Make the dough and combine the ricotta, mozzarella or provolone, Pecorino Romano or parmesan, prosciutto, salami, ham, eggs, salt, and pepper in a bowl.
Mix the ingredients in the bowl until well combined.
Roll out one-half of the dough and line the bottom and sides of the greased pan.
Spoon the filling mixture into the pie crust in the pan.
Roll out the rest of the dough and place it over the top of the filling.
Seal and crimp the edges of the pie. Brush the pie with the egg wash and cut slits on top.
Bake the pie until the crust is golden brown.
Let it cool, slice, and serve.
Mix the dough well but don't overwork.
