Preheat the oven. Prepare and cut the squash.

Step 1

Scoop the seeds and stringy fibers on both halves.

Step 2

Brush the squash with olive oil.

Step 3

Season and sprinkle salt and pepper.

Step 4

Roast the squash until flesh is tender.

Step 5

Remove from oven and let it cool. Garnish and serve.
