Sauté the onion.
Add the spinach.
Strain the excess liquid from the cooked spinach.
Chop the cook spinach and onion mixture.
Combine the spinach and the all the cheese.
Boil salted water and cook the manicotti until al dente, then set aside to cool.
Fill each shell with the spinach and cheese mixture.
Pour 1 cup of tomato sauce and arrange in a single layer in the casserole dish.
Pour the remaining sauce and top with cheese.
Bake and let it rest before serving.
Taste the ricotta and spinach mixture and adjust seasoning with salt, pepper, and a pinch of nutmeg for added flavor.
