Trim the artichokes and remove the outer leaves.
Cut off the top of each artichoke and spread the leaves slightly.
Combine breadcrumbs, grated Pecorino Romano cheese, chopped parsley, minced garlic, salt, and black pepper in a bowl.
Drizzle and mix in the olive oil in the bread crumbs mixture.
Spoon the breadcrumbs mixture and stuff the artichokes in between each leaf.
Press the stuffing into the leaves and add as much stuffing mixture as possible.
Arrange the stuffed artichokes in a pot with water, drizzle olive oil over the top of the artichokes, and season. Cover the pot and let it simmer.
Transfer the cooked stuffed artichokes to a serving dish, garnish, and serve.
Choose fresh artichokes for this recipe, and make sure to trim them properly.
