Prepare the mushrooms and gently remove their stems. Set the caps aside and chop the stems.
Sauté the mushroom stems, shallot, and garlic in a skillet over olive oil.
Cook the filling until golden brown.
Drizzle the olive oil over the mushroom caps and sprinkle the salt.
Combine the mushroom stem mixture with the remaining filling ingredients in a bowl.
Fill each mushroom cap with the filling mixture.
Place the panko breadcrumbs and parmesan cheese in a different bowl. Dip the tops of the stuffed mushrooms in the panko mixture.
Place the stuffed mushrooms on the baking sheet and bake until the tops are golden brown.
