This stuffed manicotti recipe with spinach and mushroom is the perfect family meal. It's easy to make, delicious and fun for everyone.

Ingredients

Prepare and cook the tomato sauce and bechamel, which can be made ahead of time.

Step 1

Sauté the onions, mushrooms, and spinach in a medium skillet.

Step 2

Make the filling by mixing the bechamel and cooked mushroom and spinach mixture in a bowl.

Step 3

In a baking dish, spread evenly half of the tomato sauce in a single layer at the bottom. Then sprinkle grated parmigiano.

Step 4

Place the filling in a piping bag and cut its tip off. Use this to stuff the noodles with the filling.

Step 5

Spread the stuffed noodles in the baking dish in a single layer. Then pour the remaining tomato sauce.

Step 6

Pour the remaining bechamel sauce evenly and top it with shredded mozzarella. Cover the pan and bake for 50 minutes.

Step 7

Remove the foil cover and bake again for another 5-10 minutes. Then let it rest before serving.

Step 8

Stuffed Manicotti Tips:

Make sure to spread some sauce on the bottom of your baking pan. 

Make enough red sauce and white sauce to coat the top.
