cauliflower

sweet potatoes

farro

pistachios

avocado

leafy greens

Ingredients

goat cheese

Mix the balsamic dressing ingredients, then set aside.

Step 1

Combine all the veggies in a bowl. Toss and season.

Step 2

Transfer the veggies to a baking sheet and roast.

Step 3

Cook and strain the farro grain.

Step 4

Toss the cooked farro with kale and pour the dressing.

Step 5

Add the roasted veggies to the bowl.

Step 6

Mix in the cheese, nuts, and avocado before serving.
