Baked Mediterranean Lasagna Recipe

Combine the eggplant, bell peppers, zucchini, and red onion. Season with salt, pepper, and oregano. 

Step 1

Add the olive oil on the vegetables, then toss to coat. Transfer them to a large-rimmed baking sheet lined with aluminum foil.

Step 2

Make the filling and combine ricotta cheese, mozzarella cheese, feta cheese, Parmigiano cheese, and lemon zest.

Step 3

Mix the cheese mixture until combined, and roast the veggies until soft and slightly browned. 

Step 4

Take out the vegetables from the oven. Add the spinach to the cooked veggies and toss with tongs.

Step 5

Cook the lasagna noodles in a large pot of boiled salted water until tender but still undone. Then, set them flat on a baking sheet.

Step 6

Grease the baking sheet with olive oil, add the tomato sauce, and spread at the bottom of the pan. Single layer the pasta.

Step 7

Top the pasta with tomato sauce and vegetable mixture. Then, add the ricotta mixture and sprinkle shredded cheese.

Step 8

Add more sauce and finish layering. Repeat the layers three times. Cover the top with the remaining mozzarella and parmesan.


Bake the lasagna until bubbling and cheese is melted and lightly browned.   Remove from oven, let it rest, and garnish.
