Ingredients

Option 1 Traditional Way

Using a mortar and pestle, crush the garlic cloves, followed by pine nuts and basil.

Step 1

Crush in a circular motion until smooth paste forms.

Step 2

Using a wooden spoon, mix the Parmigiano-Reggiano cheese and pecorino romano cheese then stir in olive oil.

Step 3

Option 2 Using a Blender

Combine the pesto ingredients in the blender except for the pine nuts.

Step 1

Pulse and scrape the pesto from the sides with a spatula and add the pine nuts. Top with olive oil.

Step 2

Cook the pasta and coat it with the pesto.

Final step

Pesto Pasta Tips:

Put the removable parts of the processor or the blender in the freezer for 20 minutes before using it.
