Season the chicken.
Sear the chicken in the skillet.
Remove the chicken and sauté the shallot in the same skillet.
Mix in the mustard in the skillet.
Pour the heavy cream into the skillet.
Stir in the cheese in the mixture.
Add the cooked chicken back to the pan.
Sprinkle the tarragon.
Pat chicken thighs dry with paper towels for a crispy, golden-brown sear.
