Creamy Lemon and Asparagus Ricotta Pasta

Garlic cloves Asparagus Short pasta of choice Olive oil Ground black pepper Lemon zest Fresh Mint Fresh Basil Ricotta Cheese Parmigiano cheese or parmesan cheese Salt for pasta water

In a small bowl, mix parmigiano cheese with a zest of lemon and set aside.

Step 1

Bring a large pot of salted water to boil.  Add the garlic and asparagus to the boiling water at a 3 minutes interval. Then, add the pasta.

Step 2

Strain the pasta, garlic, and asparagus. Then put them back into the empty pot and mix them with the lemon zest mixture, cooking pasta water, olive oil, salt, and pepper. Cook on medium heat.

Step 3

Transfer the cooked pasta mixture into a wide serving bowl and blob with ricotta. Drizzle it with a small amount of olive oil, pepper, and lemon juice.

Step 4

Sprinkle with mint, basil, and parmigiano.
