Peanut Butter Lunch Lady Cookie Bars

Homemade Peanut Butter Bars are back. And better than you remember them.

Let's get started!

The best way to start the school year is with a big ol' batch of these peanut butter bars. These are really easy to make, they're sweet and chewy, and they taste just like your childhood favorite!


granulated sugar 

peanut butter


all purpose flour


vanilla extract


Cookie Layer

baking soda


rolled oats

peanut butter

powdered sugar


chocolate chips


Frosting + Chocolate Layer

vanilla extract


Cream the butter, sugar, peanut butter, eggs and vanilla until light and fluffy. 

Step 1

Sift in the flour, salt, and baking soda over the creamed mixture bowl.

Step 2

Combine and mix the dry ingredients and creamed mixture. Then, add and mix the oats until combined.

Step 3

Pour and press the batter into the prepared baking pan sheet. Then bake until slightly golden on top. 

Step 4

Sprinkle the chocolate chips on top of the cookie layer and warm it in the oven. Then, spread the melted chocolate.

Step 5

Make the creamy peanut butter buttercream. Then, spread over the cooled chocolate layer.

Use creamy peanut butter for the best texture.

Make sure to use old fashioned oats
