Fregola Sarda pasta

Ingredients

Zucchini

onion

pecorino

garlic

provolone cheese

olive oil

salt and pepper 

basil leaves

Sauté the chopped onions and minced garlic in heated olive oil and cook until the onions become translucent.

Step 1

Add the diced zucchini and another batch of garlic to the skillet, and cook for another 4-5 minutes until the veggies are softened slightly.

Step 2

In a large pot of boiling salted water, cook the Fregola Sarda pasta until "al dente". Drain and reserve some pasta water.

Step 3

Add the basil leave and turn the heat off. Season with salt and pepper. Stir in the pasta water and cooked Fregola until combined.

Step 4

Place half of the fregola-zucchini mixture in the baking dish. Top it with half of the pecorino and layer half of the sliced cheese.

Step 5

Repeat the process for the remaining fregola mixture and cheese, with the last layer as cheese. Bake until golden brown.
