Homemade Tortellini in Brodo

A delicious and easy recipe for tortellini in broth.

Get ready for the holidays with an Italian classic, tortellini in brodo. This delicious and simple soup is perfect for special occasions or just to enjoy all year long.


Tortellini Chicken broth or stock Freshly ground pepper Extra-virgin olive oil Grated Parmigiano cheese Whole chicken carcass Onion Carrot Celery ribs with leaves Garlic Bay leaves Fresh rosemary Sea Salt Water


Combine all chicken broth ingredients in a large pot, cover, and bring it to a boil.

Step 1

Let the pot simmer, uncovered for 2-3 hours, and skim the foam from the top.

Step 2

Strain the broth and discard the vegetables and herbs.

Step 3

Bring the chicken broth to a boil. Then, add and cook pasta according to the package directions.

Step 4

Remove from heat and serve hot.  Serve it with freshly grated Parmigiano cheese and freshly ground black pepper.
