How to Layer the Perfect Lasagna.

A step by step guide with authentic Italian recipe.

The perfect lasagna is achieved with the right ratios of perfectly cooked pasta, sauce, bechamel, and cheese. Follow these steps for best results!

Make sure the salted water is at a roaring boil before adding the lasagna noodles. This will make sure the pasta cooks evenly and has plenty of room to swim so it doesn't stick.

Cook the pasta until al dente (a little undercooked- see  photo). If the pasta is overcooked they are more likely to stick together and get mushy.

Make sure to put the lasagna noodles on a clean tea towels and cover while you are waiting to layer them in the lasagna pan.

To layer- Start by adding a little tomato sauce or ragu sauce at the bottom of the pan to prevent the pasta from sticking.

Add first layer of pasta (lasagna noodles). Depending on the exact shape of the pan you may need to cut the ends to fit the pan.

Next is the Homemade Bechamel sauce. A properly thickened sauce will “coat the back of a wooden spoon”.

Add 1/3 of the bechamel sauce over the layer of pasta. Spread evenly over the top in a nice layer.

Add 1/3 of the bolognese ragu meat sauce over the layers of pasta and bechamel sauce.

Sprinkle 1/3 of the parmigiano and mozarella cheese over the top of the ragu and bechamel.

Repeat the process until all the layers are complete. Finish the final layer with bechamel sauce and extra parmigiano cheese (and mozzarella, if desired). Bake to perfection!
