Oven-Baked Eggplant Ricotta Recipe

A fun and delicious way to enjoy eggplant! Everyone loves these slices of crispy eggplant layered with ricotta cheese, tomato sauce, and parmesan (or parmesan) cheese.

Let's get started!

Eggplant slices with ricotta and parmigiano cheese. A meal that's as delicious as it is healthy thanks to the homemade tomato sauce and eggplant itself!

Place the eggplant slices on baking sheets with double layers of paper towels and sprinkle salt.

Step 1

Dip each slice of eggplant evenly in the flour on both sides, then toss it in the egg mixture. After, coat it with Parmigiano and breadcrumb mixture.

Step 2

Bake the coated eggplant slices in preheated oven for about 15 minutes, then set aside.

Step 3

Blend all ingredients until creamy and thick to make the ricotta filling.

Step 4

Spread the tomato sauce at the bottom of the baking pan and place the eggplant slices in a single layer.

Step 5

Add a serving of ricotta and Parmigiano cheese to the next layer, then repeat the process. Bake and garnish with fresh basil.

Remove excess liquid from the eggplant

Use Panko breadcrumbs
