It's the most wonderful time of the year. The fresh harvest is coming in, but you don't know what to do with all your fresh summer produce! (Make pickled peppers!)

Ingredients

Prepare and sterilize the jars for storing the peppers. Then, prepare the peppers by washing and cutting them into strips.

Step 1

Combine vinegar, cold water, garlic and bay leaves in a pot and bring it to a boil.

Step 2

Add the sliced peppers to the heated pot and stir it for 1 minute. Turn off the heat and allow it to sit for about 10 mins.

Step 3

Strain and remove the peppers from the pot and place it on top of a kitchen towel or baking sheet. Pat to dry.

Step 4

Fill in the jars with a variety of peppers, peppercorns, bay leaves, and garlic. Add the vinegar and fill the top of the jars.

Step 5

Securely close the lid and store the jars in the fridge or on dark cool shelves.
