Roasted Garlic Red Mashed Potatoes Recipe

Creamy and slightly chunky, this classic holiday side dish is full of roasted garlic flavor with a great texture.

Classic sides don't get any better than these mashed potatoes. They're creamy, chunky, and full of roasted garlic flavor. The perfect side dish for your holiday table.

Ingredients

green onions 

olive oil

Bake the garlic with olive and cover it in aluminum foil until the golden color starts showing.

Step 1

Remove the roasted garlic from the oven and let it cool, then squeeze the cloves out.

Step 2

Bring a pot of water with the diced potatoes and salt to a boil and cook until fork-tender.

Step 3

Cook the butter, whole milk, salt, and pepper on low heat until steamy and very fragrant while waiting for the potatoes to cook.

Step 4

Drain the potatoes and reserve water. Mash the potatoes then mix with the roasted garlic and butter mixture.

Step 5

Transfer the mashed potatoes to a serving bowl and top with fresh chopped green onion, and butter if desired.

Step 6

Red Skin Mashed Potatoes Tips:

You can use olive oil or vegan butter instead of butter

Mash the red skin potatoes DO NOT whip them!
