Sausage Sardinian Pasta

A traditional Sardinian pasta dish cooked in an Italian sausage and tomato sauce.

Ingredients

bay leaf

canned tomatoes

onion

Mix the saffron in a small bowl. Cook the sausage meat in a sauté pan with the onion. Break up the sausage and cook until browned.

Step 1

Pour the tomato puree and saffron into the mixture. Reduce the heat and let it simmer while stirring occasionally. Add the basil and stir. 

Step 2

Cook the malloreddus pasta in a large pot of boiling salted water . Cook until al dente, drain, and add to the sauté  pan.

Step 3

Add the grated pecorino romano cheese to the sausage and pasta mixture. Stir until incorporated and serve.
