Prepare and slice the zucchini thinly with a mandoline or sharp knife, and set it aside. And grate provolone and parmigiano cheese.

Step 1

Heat the oil and fry the zucchini in batches until golden brown. Remove with a slotted spoon and drain on a paper towel.

Step 2

Sprinkle the cooked zucchini with basil and salt. Then, sauté the garlic cloves and add them to the fried zucchini. 

Step 3

Reserve a few sliced zucchini for garnish. And cook the spaghetti until al dente. Drain and set aside some pasta water.

Step 4

Combine, mix, and cook all the ingredients  until it forms a creamy sauce, turn the heat to low to warm up the cheese a bit.
