 Pardulas are a mouthwatering combination of sweet ricotta and saffron, creating a unique flavor that is sure to tickle your taste buds.

In a large bowl, combine the semolina flour, flour, salt, and softened butter. Mix until the mixture looks like coarse crumbs.

Step 1

Mix and whisk the egg whites and water until well combined. Then add the egg mixture to the flour mixture, and mix until it forms.

Step 2

Once you're done kneading, cover and let the dough rest. Preheat the oven and roll out the half dough using a rolling pin.

Step 3

Once the dough is rolled in thin sheets, cut them into circles using a round cookie cutter for about 3- 3.5 inches in diameter.

Step 4

Prepare the filling and combine the ricotta cheese, saffron water, sugar, egg yolks, lemon zest, and orange zest. Beat until smooth and creamy.

Step 5

Sift the flour over the filling mixture and mix until well combined. Spoon the filling and add to the center of each dough disk.

Step 6

Pinch the edges of each filled disk and repeat the process with the rest of the shell. Bake the Pardulas and let them cook on a wire rack.

Step 7

Dust the cooled Pardulas with powdered sugar or brush with honey. Decorate with colorful sprinkles and enjoy.
