Boil the eggs in a saucepan.
Drain the water from the pan and transfer the eggs to a bowl with ice.
Peel the cooled eggs and slice them lengthwise.
Remove the egg yolks carefully with a small spoon.
Use a fork to mash the yolks in a bowl.
Add and mix the Greek yogurt, Dijon mustard, apple cider vinegar, sugar (if using), salt, and pepper to the yolks.
Fill the egg whites with the egg yolk filling using a piping bag.
