Grate the zucchini and toss 1 teaspoon of salt. Transfer it to a colander and squeeze excess moisture.

Step 1

Mix and lightly whisk all the ingredients in a large bowl.

Combine until well incorporated.

Cook the batter by adding 3 heaping tablespoon and slightly flattening it in a hot skillet pan.

Step 4

Cook the fritters for about 2-3 minutes per side until golden brown.

Step 5

Transfer the golden brown fritters to a paper towel-lined plate and repeat the process.
