This classic, easy-to-make minestrone soup is a family favorite. It's packed with vegetables and beans and makes the perfect meal on a chilly day.

Extra Virgin Olive oil Onion Garlic Carrots Celery Zucchini Red bell pepper Green beans Spinach Diced tomatoes Cannellini beans Water or broth Salt and pepper Optional: pasta Toppings: fresh basil, parsley, and grated Parmigiano Reggiano (parmesan cheese)

Ingredients

Cook the garlic, onion, carrots, celery, red pepper, and zucchini and sprinkle with salt and pepper.

Step 1

Add the canned tomatoes to the pot with other vegetables.

Step 2

Add the beans and 7 cups of water. Bring it to a boil.

Step 3

Stir in green beans and spinach. Then simmer until vegetables are tender.

Step 4

Season and add the basil. Then sprinkle parmigiano and drizzle with more oil, if desired.

Step 5

Optional: Cook pasta of choice and add it to the minestrone soup.

Step 6

Minestrone Soup Tips:

You can leave out the addition of pasta entirely if you wish.

Minestrone soup makes a freezer-friendly recipe- except for the pasta!

Serve with homemade Italian Ciabatta bread. It is easier to make than you think!
