Ingredients
- 4–5 medium chicken thighs (any variety will do- bone in, with or without skin)
- 1 tablespoon olive oil
- 8.8 oz (250 grams) mascarpone cheese
- 1/4 cup of heavy cream
- 3 tablespoons of chives, finely chopped
- 2 tablespoons lemon juice
- zest of 1 lemon
- 1/2 cup of freshly grated parmigiano cheese
- Salt and Pepper to taste
Instructions
- Preheat oven to 400 degrees F.
- In a small mixing bowl mix the mascarpone, cream, chives, lemon juice and lemon zest. Stir until well combined. Set aside.
- Season chicken with salt and pepper. In a large (oven safe) skillet add olive oil and cook the chicken on medium high heat for 4-5 minutes on each side or until brown on each side The chicken won’t be completely cooked at this point.
- Turn heat to low and add the mascarpone mixture to the pan. Coat the chicken and let the mascarpone mixture melt in the pan. Let cook an addition 5 minutes until the cream is slightly bubble on the sides of the pan.
- Sprinkle top with fresh parmigiano cheese and bake for an additional 5-8 until the top is bubbly and golden brown. Sprinkle top with extra chives and fresh cracked pepper before serving.
