I sneak in plenty of lemon, garlic, and fresh spinach to boost your immune system this winter. This yummy bowl of soup is light and flavorful. It’s the perfect no fuss weeknight meal for a busy day.

Ingredients

  • 1 carton (32 fluid oz) organic chicken or vegetable broth
  • 1 (20 oz) package three cheese tortellini (or your favorite variety)
  • 3 Tbs fresh lemon juice (extra slices for serving)
  • 1/2 tsp. dried thyme leaves
  • 3 leaves fresh sage, finely minced
  • 2 cloves fresh garlic, cut in quarters
  • 2 cups fresh leaf spinach
  • 1/2 cup parmigiano cheese, shredded, for serving
  • 4 slices lemon, garnish

Instructions

  1. Place broth, spinach, lemon juice, thyme, sage, and garlic in a medium soup pot, bring to a boil
  2. Cook tortellini according to package directions 
  3. Serve in individual bowls. Top with fresh grated parmigiano and extra lemon slices. Serve immediately.
